CAN YOU TELL US A STORY, A FAMOUS ANECDOTE ABOUT THIS PLACE THAT MAKES IT UNIQUE?
A few years ago we were fortunate enough to have the Stanley Cup visit Hawksworth Restaurant, as Chef is friends with one of the then championship players. Being that the Cup is arguably the most unifying symbol of Canadiana, its mere presence caused quite a stir! Guests were leaving their tables, and in some cases their dates to get closer to the holy grail of hockey as it was paraded through the dining room and into the kitchen for photos. A few years later and now we have a different symbol of excellence in the restaurant, as we are the Canadian home for the Louis XIII offering, Rare Cask 42,6. It seems fitting that we have hosted the Stanley Cup and have given a home to Rare Cask 42,6. As both of these icons represent passion, dedication and professionalism; so to does Hawksworth Restaurant.

HOW DID YOU BECOME SO PASSIONATE ABOUT WINE & SPIRITS?
It was an evolution. After years of bartending around the world the more I grew to appreciate spirits the more I became increasingly passionate.
HOW AND WHEN DID YOU FIRST DISCOVER LOUIS XIII?
As a young bartender learning the trade while being inspired by the craft, Louis XIII was the mystical jewel that lived on the top shelf. Only birthdays, anniversaries and the most special of celebrations would coax it from its perch. That said, from early in my career Louis XIII was always an emblem of rare occasion, reserved for those guests who were passionate about experiencing the greatest of life's pleasures. When I was finally able to experience Louis XIII for myself - all those memories as a young and curious bartender came flooding back. Celebration, craftsmanship and passion in a glass.

Leading the team at Hawksworth Cocktail Bar, Nova Scotia-born Cooper Tardivel's personal mantra is "you're only as good as your last drink", which underscores the compelling and dynamic cocktail program that anchors the venue as one of the leading cocktail bars in the city.
Before joining the team at Hawksworth Cooper honed his bartending skills all over the world from top spots in Halifax, Mexico, Fiji and Australia. As a result, Cooper won Best Bartender in Halifax (Coast Magazine) on two separate occasions. Through his role as manager of the acclaimed cocktail club Mosaic Social Dining Lounge, Cooper visited Vancouver in 2011 where he first met David Hawksworth; drawn by his vision Cooper decided to move across the country to become part of the restaurant's opening team in May 2011.
"Bartending is about more than mixing a good drink," says Cooper. "A good bartender should be able to quickly understand a guest's needs, offer them good conversation and beverages tailored to their taste, all whilst managing the energy of the room." Cooper's passion and dedication to the cocktail continues to shine at Hawksworth, he takes immense pride in crafting modern and classic.
