In practice, by sitting at the bar you may very well rub shoulders with a billionaire in disguise or a famous celebrity. Every day is unique… The one story I can tell is quite famous actually. It's the one about M. Patrick Selin, a regular at the restaurant, who throughout his solo dinner was real-time bidding to win the domain name for his gambling website. He was taking the first bite of his Foie Gras Burger when he won the bid for US$ 4 million. It is safe to say that he enjoyed that night the most expensive burger in the world…

HOW DID YOU BECOME SO PASSIONATE ABOUT WINE & SPIRITS?
In 2000 I was lucky enough to attend a series of wine and spirits courses dispensed by renowned experts at the time – Giuseppe Vaccarini and Andrew Bell. They shared with me a few key secrets about the wine & spirits world. From there on, it was only natural for me to desire more knowledge about a trade I had fallen in love with.
HOW AND WHEN DID YOU FIRST DISCOVER LOUIS XIII?
I first saw the decanter in 2005 in a night club in my home town of Shumen. I believe they doubled their clientele from sheer customer curiosity about what is inside this crystal beauty. But the 'wow' effect of the decanter is nothing compared to the taste of the elixir – a pure explosion of incredible flavors.

Born in Shumen, north-east Bulgaria, Ivo has been crowned 'Best Sommelier in Bulgaria' and was a semi-finalist at The European Sommelier of the Year awards in both 2002 and 2004. His passion for fine wine developed under the expert guidance of Andrew Bell and Giuseppe Vaccarini. In 2005, Ivo moved to London, the wine capital of the world. Initially working at The Great Eastern Hotel, he was appointed Head Sommelier at L'Atelier de Joël Robuchon in 2008.
